Most kombuchas are made with chlorinated and demineralized city water. No filter can fix bad water. The flavours of the tea will not fully release because the chloramines will impede natural fermentation. The final product will taste bland and acidic. At Loon, our pristine water is sourced from our century-old country well. It is both alkaline and naturally mineralized, testing purer than most commercial spring waters! The result is are freshing beverage of astounding purity.
We steep our organic teas in water that is extremely cold, just above freezing. This softly releases the flavours of the tea leaves. As a result, we avoid the bitter taste typical of most hot-brewed teas, and consequently, hot-brewed kombuchas. This is why Loon Kombucha brews are so smooth and flavourful.

Simply clean and sanitize your Loon Kombucha bottle sand bring them into one of our refill stations or to one of our farmers’ market stalls for a reduced-price refill. Many mass-produced kombuchas are fermented in plastic vessels and even sold in plastic bottles. Acidic products like kombucha will cause the chemicals from these plastics to leech into the product. We brew in stainless steel tanks because purity is everything at Loon Kombucha. We will never compromise on the quality of our product and are committed to being a genuinely sustainable brand.
We brew our batches raw and unpasteurized (no kill step) to deliver natural, beneficial bacteria to your gut. Many mass-produced kombuchas are synthesized without scobies. We don’t do that kind of corner cutting. We use real scobies for an authentic fermentation so that you receive a complete and natural #guthealth boost.
