The flavours of the tea will not fully release because the chloramines will impede natural fermentation. The final product will taste bland and acidic. We steep our organic teas in water that is extremely cold, just above freezing. This softly releases the flavours of the tea leaves. As a result, we avoid the bitter taste typical of most hot-brewed teas, and consequently, hot-brewed kombuchas. This is why Loon Kombucha brews are so smooth and flavourful.
From the beginning, all of our bottles have been refillable. You can clean and sanitize Loon Kombucha bottles and bring them into one of our refill stations or to one of our farmers’ market stalls for a reduced-price refill. We also carry a line of cans which are fully recyclable in a closed loop. While you can reuse the glass bottle, it will exist for centuries; the aluminum cans are fully repurposed into other cans.
Many mass-produced kombuchas are fermented in plastic vessels and even sold in plastic bottles. Acidic products like kombucha will cause the chemicals from these plastics to leech into the product. We brew in stainless steel tanks because purity is everything at Loon Kombucha. We will never compromise on the quality of our product and are committed to being a genuinely sustainable brand.
We brew our batches raw and unpasteurized (no kill step) to deliver natural, beneficial bacteria to your gut. Many mass-produced kombuchas are synthesized without scobies in third-party soda factories. We don’t do that kind of corner cutting. We use real scobies for an authentic fermentation so that you receive a complete and natural #guthealth boost.
